Development of a Microcontroller - based Process Controller for On - line Monitoring of Kimchi Fermentation

|
For on-line monitoring of kimchi fermentation process a microcontroller-based process controller was designed and fabricated. The MCS-8052AH single chip was used as the CPU, and circuitries were designed for the acquisition of process data and control of the fermentation environment. The controller was interfaced with a microcomputer using serial communication to perform on-line monitoring of the fermentation process. The operation software for the on-line monitoring of kimchi fermentation was programmed with MCS-8052 BASIC embedded in the MCS-8052 chip. Three types of kimchi, made with Chinese cabbage, radish and cucumber, were fermented using various material compositions and salt concentrations. Bubble counting sensors were interfaced to the controller and used to measure the extent of gas formation during fermentation. The controller successfully controlled the process variables of the fermenter and measured gas production rates in six fermenting kimchi bottles. The gas production rates were compared among the different kimchies. A single gas production peak was observed in the Chinese cabbage and cucumber kimchies, while double peaks were observed in the radish kimchi.
